The photo URL is part of the XML in your RSS.
tag is
[itunes:link rel="image" type="video/jpeg" href="http://www.imaopodcast.com/imaopodlink.jpg"]IMAO Podcast[/itunes:link]
Replace brackets with greater than and less than signs. and of course your own URL and caption.
