Pizza Dough Recipe

I love to bake. I make bread and pizza dough all the time. I wanted to share with you all my recipe for pizza dough.

First, you need a stand mixer. I have a 5 quart Kitchen-Aid, but any stand mixer with a dough hook will do.

Also, you should use Unbleached Bread Flour. Bread flour works best because of the high protein content leads to good gluten to give the dough it's trademark chewey texture like good pizza has.

1 1/8 cup hot water
1 T sugar
1 T Honey
1 1/2 T dry yeast
1 T Extra Virgin Olive Oil
3 C Flour
1 t salt

Combine water, sugar, honey, and yeast in bowl, and mix with fork for 10 seconds. Let stand 10 minutes till it starts to foam (yeast starting to work).

Add 1 cup of flour and beat with the flat mixer for 1 minute. Add the rest of the flour 1/2 cup at a time, beating for 30 seconds before adding more flour. Add Olive Oil and salt when you add the last of the flour.

Beat with the dough hook for 30 minutes. After 30 minutes pick a piece of the flour off and stretch to see if it stretches thin enough to see through. This is called a baker's pane, and is a good indication you have worked the gluten enough.

Let rise for 1 hour, or until doubled. Punch down, and let rise another 30 minutes.

Use the dough for pizza, flatbread, stomboli, calzones, or whatever need you see fit. You can freeze the extra dough, but be sure to bring to room temperature before you use again.

I could use some help...

Dear Munivianans,

I've been working on setting up my new mu.nu site for six hours now, and I've hit a gumption trap. I could really use some tech help at this point. Check out my blog at tryingtogrok.mu.nu to visualize my problem.

I'd like to get the sidebar to be a little thinner, but I certainly can't figure out how to do that. I'd like it if the dotted line were right up next to the photo of me so that there isn't so much wasted white space. Does anyone know how to do that?

I'd also like to archive by topic, which I see some have done. I'm sure it's something really easy, but I'm too burned out at this point to figure it out myself.

I'm almost there...

Things that make you go hmmmm.....

I sent myself an email to my default mu.nu. address. It shows up in the inbox of Neomail and Squirrel Mail, but not Horde....???
When I click on any of the three email choices I get a redirect page first....???
I managed to create an additional email id for myself, but can't figure out how to access it....???

A little help????

PHP List

Anybody know how the heck to get PHP List out of "Test" mode so I can actually test it? It won't send email whilst in test mode and I've no idea how to get to the config file and there's no option in the GUI menu to take it out of cannibalized mode.

Ecosystem Change?

Does anybody have any idea why i can't seem to change my URL on the ecosystem? i've been submitting requests to NZ Bear every day for a couple of weeks now, but i'm still listed at my old Glogspot address. And my rank keeps going down as people update their links. : (

cPanel email working?

Are our Cpanel emails working? I've tried setting up emails. I've tried sending emails from the webmail, and sent to my webmail, but I never got anything.

NONE!

I've received two mails from folks that tried to comment but got the big ban for using the word "none" in the comment.

Have we removed that as a banned word on the Blacklist? Cause that's the stupidest excuse for a banned word that I have ever heard of. I can list about a million others that I would much prefer to have on the banned list :)

In The Laboratory

I've been trying to find out the right way to implement labs (and other subsites) with WHM/CPanel.

Turns out that there isn't one. You can only do it the wrong way. Well, as far as I can see, anyway.

All I want is:

Another domain name.
Under an existing user.
That points to a different directory.
A directory under that user's account.
But not a subdirectory of their main web site.
As far as I can tell, neither CPanel nor WHM will let you do that. It's trivial with Apache.

So I just went and hacked the Apache configuration file. That works, at least.

I'll do the other labs shortly. MookieLab I fudged because Mookie needed it for her blog to work, so I'll need to go back and redo that one.

Bwahahaha!

I now have CPanel bent to my will. Well, I have it configured the way I want it, anyway.

You all have control over your mu.nu domains. Well, you will once I send you your CPanel logins, anyway. You can also, if you happen to have a .com or .net or some such domain lying about, associate that with your mu.nu account.

You can create subdomains under your main domain too. So, for example, Susie could create everlastingslurpee.practicalpenumbra.mu.nu if she had a mind to.

You can receive email at your domain, and send email from it. I will also be creating a mu.nu email address for everybody. susie at mu dot nu and so on. We don't have any name collisions yet, do we?

Hmm. What else?

Oh yes. Your accounts give you each 500 megabytes of disk space and 5 gigabytes a month of bandwidth. Those limits are really just there in case something goes wrong. Given all the toys you have to play with, you might unintentionally chew up a lot of disk space. Or something. If you really do need more space or bandwidth, that's not a problem, there's plenty to spare. At the moment, no-one is using more than about 50 meg of disk space or 2 gig a month of bandwidth. (Susie is top of the bandwidth users, by the way, followed by Jim, then me, then Helen.)

We have 60 gig of (mirrored!) disk dedicated to the web sites and 500 gig a month of bandwidth, so we can easily accomodate a hundred blogs.*

Speaking of which...

* Unless one of you turns out to be the next Instapundit. I calculated a while back that Glenn must go through about 200 gig of bandwidth a month... Turns out I was within 10% of the actual figure.

Update: Oh, your disk usage won't show up until I've fully integrated your blog with CPanel. I'm doing this one blog at a time, so each blog will be down at some point for about fifteen seconds.

Today is Fastnacht Day, or Shrove Tuesday, and is a day to eat larded donuts to celebrate one more day before lent started.

Eat a Donut and pretend its a fastnacht, and enjoy a tradition which is part of the Pennsylvania Dutch and Amish regions of eastern Pennsylvania.

QQ

Quick Question: Does anyone actually use their two-letter secret MuNu codes? I know Susie does, I'm pretty sure Jennifer does. Anyone else?

I ask because I've only bothered to set up pp and jl so far.

I'm thinking of setting up a personalisable web portal thingy at my.mu.nu. (Like my.yahoo.com). Then I can grab the username "me" and have the email address me at my dot mu dot nu. (Don't want the spammers to get it before I even set it up.)

Coupla things

I'm sad. My .com doesn't even work at work any more. It's like watching as a patient slowly slip into death. The heart monitor gets slower and slower. The breaths shallower and shallower. Finally, the single tone of the flatline. [sniff]

Also, the remember info in comments doesn't seem to work at all any more.

DNS. Bah!

All the remaining issues seem to be DNS-related and are driving me slightly crazy.

For one thing, we've moved from a single centralised mu.nu domain where everything was controlled with a simple text file, to a multispliferous system that is controlled through CPanel.

In theory, this is good, because now you have control over your own domains. In practice, it is very very fiddly.

For example, if I set up Jim's account as snoozebuttondreams.mu.nu and park snoozebuttondreams.com on top of it, the server doesn't know it should be handling DNS for snoozebuttondreams.com. On the other hand, if I set up the account as snoozebuttondreams.com, I can't park snoozebuttondreams.mu.nu on top because CPanel thinks it's owned by another user. I don't know who, because it doesn't tell me, but I think it's because I also have an account for the mu.nu domain itself. I don't think CPanel likes that much.

Oh, and even though I set up the DNS in advance to refresh after 20 minutes, so that we wouldn't have to wait hours for it to propagate, it's still taking hours to propagate. Pfft.

Logging In

Hi all.

Some of the ways of logging in that worked before might not work now. Helen found one of them. I suspect Susie found another.

The easiest way is to just go to http://blog.mu.nu/. That should bring the login up. If you're already getting the login okay, don't worry about it.

Status Update

Okay, everything is moved across to the new server. I am still tidying up bits and pieces, but it mostly works. The various Lab Blogs haven't been set up, but will be done by tomorrow.

If you see anything else that doesn't work, please comment here, because I could well have missed something.

Trouble with my title

I'm having trouble with my logo at the top of my blog.

I can't get it to appear right. I tried looking at the style sheet, and upped it to a highre number, but it still won't appear.

I looked in the main index template, but can't find where to make it so I can see my new logo.

any suggestions?

Bastardry Afoot

Hi kids.

We seem to be under some sort of spam attack. Please bear with me while I get it cleaned up and then blocked. In the mean time posting will be a little bit slow.

Update: Okay, I've deleted 130 spam comments and blocked the lowlife's IP address (81.9.106.157). We won't be hearing from them again in a hurry!

Another 40-odd spams were blocked by MT Blacklist between the time I added it to the list and the time I blocked the IP. (About 15 minutes.)

Reminder

Remember, MuNu will be Munuving this coming Saturday (the 21th of Feb). I'll be doing the work during the day where I am, which (except for Simon and Cherry) will be during the night where you are.

All the blogs should be readable at all times during the move, but posting and commenting will be turned off for a few hours.

Once the move is completed successfully, I'll be emailing everyone their password so they can log in and play with the new toys. Your Movable Type logins won't change, but you'll have an extra login for everything else.

How can I view all comments and delete ones I don't want.

I had a problem with very racist comments, and I didn't know until they were made public at Blogcricis.org, and I was accused of supporting those wacky racists.

OK, my lovelies, a question-my pc has decided to hate me...again...which is quite distressing. And it's hating me thus: I cannot open some blogs, as it asks me where I want to save the content, instead of opening it (ie on Sedalina's page).

Any ideas on how to fix this?

The Brave Little Guinea Pig

Rob from Xset has agreed to test the new MuNu server for us. Since all the Munuvians have to munuve in one go, I thought it wise to have someone check for landmines have a little play around first.

May I invite someone?

Well, it seems like my husband has abandoned his blog. Leastways, that's what he says, and so, I don't think he'll be coming over to Munuviana. (I think he's just shy...)

Other than that, what is the protocol for inviting someone to join us? I belong to an online discussion group, and one of the members is really cool. He's a retired journalist and editor, and has some really great insight on life, etc.

I'm thinking about inviting him to first do the occasional guest spot on my blog, and then, if the bug takes him, seeing if he'd like a blog of his own?

How does that work around here? (Asdie from adding additional authors, which I know how to do.) I know that you guys like to review someone's work before they're invited to come onboard, so is it OK if I have him put up a few posts as guest author? Is there any problem with that, Pixy?

I just don't want to commit any sort of etiquette violation.

I was replying to a comment on my own blog, and MT Blacklist told me I suck. The offending material?

None of them is anything less than brilliant.
Try it yourself! It's weird, but it's consistent.
